Ingredients:

  • 900 gr potatoes cut into cubes

  • 2 tablespoons rice vinegar

  • 1 1/2 tablespoon sesame oil

  • 4 teaspoons lemongrass, finely chopped

  • 1 tablespoon water

  • 2 teaspoons fresh ginger, grated

  • 3/4 teaspoon salt

  • 1 jalapeño chile, finely chopped

  • 1/3 cup green onion, finely chopped

  • 2 tablespoons cilantro, finely chopped

Preparation:

  • Place potatoes in a pot, cover with cold water. Bring to a boil, reduce heat, and simmer for 10 minutes or until tender. Drain.

  • In a deep bowl, combine vinegar, sesame oil, lemongrass, water, ginger, salt, and jalapeño. Stir well.

  • Add the potatoes to the lemongrass mixture, stir gently, and let cool and settle.

  • Sprinkle the salad with green onion and cilantro. Serve.
