900 gr potatoes cut into cubes
2 tablespoons rice vinegar
1 1/2 tablespoon sesame oil
4 teaspoons lemongrass, finely chopped
1 tablespoon water
2 teaspoons fresh ginger, grated
3/4 teaspoon salt
1 jalapeño chile, finely chopped
1/3 cup green onion, finely chopped
2 tablespoons cilantro, finely chopped
Place potatoes in a pot, cover with cold water. Bring to a boil, reduce heat, and simmer for 10 minutes or until tender. Drain.
In a deep bowl, combine vinegar, sesame oil, lemongrass, water, ginger, salt, and jalapeño. Stir well.
Add the potatoes to the lemongrass mixture, stir gently, and let cool and settle.
Sprinkle the salad with green onion and cilantro. Serve.
