This recipe incorporates chia seeds, is simple to make and super refreshing. It can be used as a side dish for meats or other dishes.
Calories: 100 kcal.
Grams of protein: 10 gr. equivalent to one protein serving
Grams of fat: 3 gr.
Grams of carbohydrates: 20 gr. equivalent to 1.5 servings of carbohydrate (vegetable)

1 large cucumber, sliced thin
1/2 onion cut into thin strips
4 1/2 tablespoons of rice vinegar
1/2 tablespoon of sweetener (Splenda, stevia, etc.)
Salt to taste
1/2 tablespoon of chia seeds
Combine all ingredients, except the chia seeds, in a deep dish and let rest for one hour.
Before serving, sprinkle with chia seeds.
