Cucumber and Chia Seed Salad

This recipe incorporates chia seeds, is simple to make and super refreshing. It can be used as a side dish for meats or other dishes.

Approximate Nutritional Content: (entire salad, approximately 2 servings)

  • Calories: 100 kcal.

  • Grams of protein: 10 gr. equivalent to one protein serving

  • Grams of fat: 3 gr.

  • Grams of carbohydrates: 20 gr. equivalent to 1.5 servings of carbohydrate (vegetable)

Note: nutritional information may vary according to the quantity and type of ingredients used.

Ingredients:

  • 1 large cucumber, sliced thin

  • 1/2 onion cut into thin strips

  • 4 1/2 tablespoons of rice vinegar

  • 1/2 tablespoon of sweetener (Splenda, stevia, etc.)

  • Salt to taste

  • 1/2 tablespoon of chia seeds

Preparation:

  • Combine all ingredients, except the chia seeds, in a deep dish and let rest for one hour.

  • Before serving, sprinkle with chia seeds.
